Missing the crunch....
I am in the middle of running around to get my son ready for his online class. As we got up too late as always, I am almost in panic so he should not miss the class, he comes and hug me saying that don’t worry you are my best teacher, that just made my day. IN the middle of this madness somewhere we are so occupied with our lives that we miss out on simple beautiful things in life like a hug ,a peck ,rain, plants etc. These small little things are the emotional charge that keeps us going strong in most difficult situations which we need the most.
When I feel low, I would love to have a little dose of girly chit chat and sipping a cup of masala chai...with a little crunch to keep me going for rest of my day....So for today I decided to have that crunch with a coconut as an ingrediet.Coconut is one of the most versatile ingredient which can pep up any dish and Coconuts are especially high in manganese, which is essential for bone health and the metabolism of carbohydrates, proteins, and cholesterol ..They're also rich in copper and iron, which help form red blood cells, as well as selenium, an important antioxidant that protects your cells.
Lets get started..A tip to all, sometimes it good to bake just for youself.Because always remember you are special and need lot of love.If you are happy only then you can keep others happy too. So let that love come to you in a form of cookie.... super simple recipe even for people who cant bake or cook.....
Eggless Whole wheat Coconut Cookies Recipe
Eggless Whole Wheat Coconut Cookies is a healthy cookie dish which is prepared without using eggs. Cookies should not be always butter-rich or loaded with refined flour and trans fats. Make a healthy switch with this Eggless whole wheat cookie which is perfect for your tea time parties.
Ingredients
• 1-1/2 cups Whole Wheat Flour
• 2 tablespoon Custard powder
• 1/3 cup Sunflower Oil
• 3 tablespoon Desiccated Coconut/ half a cup to roll from outside
• 1/2 tablespoon Vanilla Extract
• 3/4 cup Brown Sugar powdered
• Salt , A pinch
• 1/4 teaspoon Baking soda
• 3/4 teaspoon Baking powder
• 4 tablespoon Milk(use lil more if required for kneading)
Method:
1. To begin with Eggless Whole Wheat Coconut Cookies, sieve the dry ingredients which include whole wheat flour, custard powder, salt, baking soda and baking powder. To this add desiccated coconut and mix well.
2. Add the powdered brown sugar, oil and vanilla essence and bring it to a smooth dough.knead the mixture with very light hands.
3. Add a tablespoon of milk, and bind it properly. Cover the dough and let it rest for about 5 minutes.
4. Make small roundels of the dough and flatten it with a fork, place them on the lined baking tray. Use the rest of the dough to make similar cookies.
5. Bake for 12-15 mins at 180 degree or when they start to crinkle and done from the edges in an convection.
6. They will remain slightly soft when taken out and harden within 10 mins on a cooling rack. Store in an airtight container once completely cooled and enjoy it during your tea time breaks
Note :If you want to make them in regular flour procedure will be the same
Only ingredients and baking time will be different.
60 gm flour
50 gm powdered sugar
40 gm desiccated coconut and half a cup for coating
40 gms butter
1 tsp baking powder
1 tsp vanilla essence
A pinch of salt to enhance flavour
Bake at 180 degree for 20 min...
