GO Bananas......
My god not again cos this was third time I was baking my muffins and bread using mushy bananas.But honestly, mushy bananas gives you soft and sweeter bread, which your kids will surely love.
As I always keep experimenting with fruit pulps to makes eggless cakes and muffins still was always on a lookout for a healthy banana bread recipe and to my shock this one was liked by my husband so I gave it a tick.
As I had to bake something and this magic ingredient was lying around waiting for me to turn it into a yummy Choco filled healthy treat.I started thinking and decided to bake banana bread with oats and Choco chips.
Before we go ahead with the recipe little information about bananas as it’s the second most important food crop in India after mangoes.They contain several essential nutrients and provide benefits for digestion, heart health and weight loss.Aside from being very nutritious, they are also a highly convenient snack food.
BANANA BREAD
Ingredients:
• 2 ripe bananas
• ⅓ cup butter(75 g), melted/olive oil
• ¾ cup sugar(100 g)/you can keep it half if u like less sweet/brown sugar
• ½ cup oats
• 1 teaspoon vanilla extract
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• A pinch of salt
• 3 teaspoon coco powder
• 1 ½ cups all-purpose flour
• 3 /4 cup mini chocolate chips
• 2 -3 tbsp curd
Preparation
1. Preheat oven to 350˚F (180˚C)for 7 minutes.
2. In a bowl, add the bananas and mash until smooth. Add in the melted butter and curd stir until well combined.
3. Add the sugar, vanilla, baking soda,baking powder, salt, coco powder ,half oats and flour, and stir until the batter is smooth.
This one is without coco powder as its optional...
4. Add half Choco chips and some oats to put on the top.
5. Apply little oil in your baking dish and dust little flour.
6. Pour the batter and bake at 180 degrees for 35 to 40 minutes...check once after 35 minutes. The knief inserted should come out clean.
Thats how it looks after baking...
7. Let it cool down only after that remove it from the container. Slice it and enjoy.
