HAPPINESS IS HOMEMADE



  
I dropped my son off to school and entered my house and saw everything scattered as always i started arranging the cushionsand came accross one cushion which i might have seen many times but never thought about it.It says 'happiness is homemade,yes and i read it again.It means we are creators of our own happiness, than depending on others to make us happy.Happiness lies within us.And truly like everything else being happy also requires efforts.

So What is happiness from a personal perspective? It varies from person to person. Like for many it means to see your kid grow or share a cup of tea with a dear friend. Like for me its as silly as  dancing in my house with my son and serving my dear husband dosa on Saturdays..
Best part about it is that its not constant and keep changing with time place etc or it can be as fatuous as  just snuggling up with your pet, getting your hands soiled and see something grow, making art with your own hands no matter how bad it turns out to be or the little moments which you love to capture sometimes either with your camera or in your heart for lifetime is real happiness. Trust me if you honestly happy from within you need not flaunt it on Facebook or Instagram for taking likes from who’s who,half of them you don’t even know.

You need to learn what works for you the best.Once you are on it rest everything will fall into place. Its important because it has direct relation with our physical and mental well being.

I found my happiness in all the things I do or create every day, big or small. So to dig into my own happiness by baking eggless whole wheat Choco chip cookies loaded with almond and walnuts. And I am sharing my happiness mantra with you all..
This is my personal favourite cookie recipes as its very healthy and loaded with goodness. 

These are slightly crunchy, with apt sweetness you can munch anytime. And it will be sure hit with kids too so what you waiting for?. So bake your batch of these yummy cookies Eggless whole wheat cookies.

For quite somtime I’ve been on a look out  for healthy eggless chocolate chip cookie recipe. I wanted it to be super delicious subway  style cocolate chip cookies that completely mesmarize your  taste buds upon first bite. I wanted a chewy texture at the center, crunch on top, simple flavors and healthy for kids.

I want all of that in a cookie recipe that’s easy to make. No mixer required. No creaming of softened-but-not-too-soft butter. No chilling the dough for 24 hours. I don’t have the patience for any of that. Sometimes a girl just needs a cookie!

So here i wanna share my favourite recipie with all you lovely people...

Servings: 17 cookies
Ingredients
1. 1 cup wheat flour
  1/4 tsp baking powder
2. 1/4 tsp baking soda
3. ½ cup butter(at room temperature)/olive oil/coconut oil
4. 1/2cup powdered sugar or brown sugar
5. 2 tbsp  curd or 1/4th cup milk
6. 1/2 tsp vanilla essence
7. 1/4 cup Choco chips
8.     1 cup coarsely grounded almond and walnuts.
& don't forget a pinch of salt to enhance the flavour.


Instructions:
1. Preheat oven at 180 deg C for 10 mins. In a mixing bowl, place a flour on sieve. Add flour, baking powder and baking soda. Sieve it twice.Add coarsely ground dry fruits.
2. Set aside. In another mixing bowl add butter and powdered sugar.
3. Beat it well. I used my electric hand mixer you can use a whisk too and if you don’t have a blender use your hands or manual egg beater. Add 1/4th cup milk or 
4. Add vanilla essence. Mix well.
5. Now add the flour and mix it with your finger tips until it forms crumbly like shown below. Now add Choco chips reserving just a tsp alone.
6. Add 1/4th milk or two tbsp curd till it holds together, When you hold with your palms it should leave an impression and it should not fall apart. No need to form a dough. Now using a tbsp measure scoop.
7. Roll it using your palms and slightly flatten it.Arrange it on a baking tray with parchment paper laid.
8. Now take few Choco chips and press it on each cookie on top. Bake in preheated oven at 180 deg C for 15-20 mins or until the cookies turn golden. Cool on wire rack then store.
