Some Cravings lasts forever..



We are always on a lookout for good food. And whenever we decide not to eat we go grab a subway. It’s Crazy but cant resist the goodness of honey oats loaf loaded with yummy paneer tikka and loads of vegetables and sauces!mouthwatering......


I never made a conscious effort to make it at home though I bake a lot of different breads. But this lockdown is making us do so many things we never thought we could like my  husband giving haircut to my son.Seeing so much multitasking happening around I decided to give it a try  because we were missing subway like hell & going out and taking a risk was not on my list.
Tried having a sub with other combinations of loaf but multigrain honey oats subway sandwich still the best and was stuck on my baking checklist. My son not a fan of sub sandwich as most of the stuffing is  raw but we love it like crazy. Now we always choose  multigrain honey oats bread with panner tikka and dash of mustard, extra cheese and mint mayonnaise loaded with all vegetables.Gerkins and olives are my favourite.
I wanted a eggless version so  and came up with my own version which is 95 percent like a store bought loaf. I was so happy and content after baking this bread.Making panner tikka was mandatory to complete the indulgence and treat for my son as he paneer tikka fan.


This quantity you will get 2 medium size loaves.

For The Bread:

Wheat Flour / Multigrain Flour – 1 cup
Quick Cooking Oats – 1/2 cup (I used Quaker)
Maida – 1 cup
Instant Yeast – 1 1/2 tsp
Water – 1/2 cup(as required to knead a soft dough after you add milk)
Milk – 1/2 cup
Olive Oil – 1/4cup
Salt – 1/8 tsp
Honey – 2 tbsp or 1 tsp sugar
Vital wheat gluten-1tbsp (* not to be used for people who are gluten intolerant)

If you make your bread without it the exact texture will be missing,the softness of the bread
So instead use 2 cup regular flour if u dont have
Vital wheat gluten.


For The Stuffing:

Tomato – few slices
Cucumber – few slices
Lettuce 1/4 cup
Olives few
Red onions sliced thing rounds left in water

For Paneer tikka :
250 gram paneer cubed (small cubes)
Marinate in Curd(Yogurt)- 1/4 cup
Mint chutney 
1 tsp butter
Salt 
chat masala to your taste
Let it marinate for 40 minutes keep in the fridge.
After that bake at 200 degress for 10 min and put it on a pan aft that on low heat/totally pan roast it for 15 min on low heat. 
Your panner tikka is ready.

Sauces:
Mayonnaise
Oregano – 1/4 tsp
Chilli Tomato Sauce – 2 tsp
Chilli flakes
Cheese slice

For Mint Mayonnaise:

Green chutney(mint, green chilli and coriander leaves churned with little salt ) add 3 teaspoon to this into 5 teaspoon of mayonnaise. Your mint mayonnaise is ready.

Method for bread:

1. Grind oats to a fine powder. In a mixing bowl add wheat flour,oats flour, Maida, yeast, salt and whisk it well.

2. Now add milk,oil, honey and water. Mix well and knead for 8 to 9 minutes to form a smooth dough. Keep it in a warm place undisturbed for an 40 -45 minutes.When u check after 45 minutes ,the dough would have been raised. Now punch it again.Cut it into three equal parts.

3. Roll the out in a rough rectangular shape with rolling pin.Tuck the corners in and make a roll pinch with your finger’s to seal. Arrange the prepared rolls on the baking tray and make slits (not too deep just slightly) with a knife.Brush it with prepared milk honey mixture and sprinkle oats and oregano on top.

4. keep them covered with a cloth for second rise of 20 minutes before we bake.keep something between them so they dont stick.

5.Preheat the oven for 180 degree Celsius for 10 mins.Spray some water on it,very little and keep a bowl of hot water at the base of oven.

6.Bake in preheated oven at 200 deg Celcius for 20-25mins until the top turns golden brown. After its done brush little butter on top and cover the loaves.Cool down completely and then slice the roll and they are ready to turn it into a sub of your choice.

7.Add cheese spread, tomato sauce and oregano in a mixing bowl to make a spread. Set aside. Now between the 2 halves of the sandwich put thus spread,layer, sprinkle little  salt and panner tikka top layer will be cheese slice.


My Notes:

I love wingreens and veeba sauces you can use them.
If you are baking the rolls in advance then warm up the roll just before preparing the sandwich. The sandwich filling can be of your choice , I just used the ingredients available. You can use just fresh leafy vegetables just like how they serve in Subway.
•While kneading make sure you knead well and there are no cracks.
Don’t be tempted to overbake mine was done in 25mins,it depends on the oven you are using 20 -30 min should be maximun.
Brushing the top with milk gives nice browning if you don’t use egg wash,but in this case after second resting you need to spray water before you bake it.
The dough shouldn’t be sticky ,sprinkle some flour and knead.The dough shouldn’t be very hard, if it is then the rolls will be hard.
You can some maize flour or regular flour to avoid the dough from sticking to the base.
If you are using instant yeast no need to ferment it, add it along with flour directly and knead with warm water.
I rested just for 45 minutes.Resting time depends on your climatic conditions and the type of yeast you are using .I used instant yeast.

You can add vital wheat gluten to any bread recipe, but it's especially effective when baking with low-protein flours like whole wheat and rye (which have trouble developing enough gluten) or in recipes with a lot of extra ingredients added in like nuts, dried fruit, or seeds.
You can easliy buy from amazon or buy from store that sell baking supply.
I have mentioned in my recipe because its not recommended to be used for people who are gluten intolerant.
