Magic of rice flour...

It’s a lazy Saturday morning and I want to sleep a little more because no online class today. But my son is super generous to keep a track of holidays and wake up earlier than regular days & 🙄🙄Wakes me up at 7:30 gosh.
I am half asleep and there comes his first question and that is 'what is there for breakfast??'😬I start wondering what can I make quickly. Very less dosa batter left, may be a little sambar is there. That  reminds me of a quick and easy recipe of  instant vada I came across lately.And my son loves vada, so i decided to make it.


When we were in vizag we use to go for lunch brunch many times at a local cafes & I use to feast on these south Indian delicacies.However Ever wondered how easily these can be made at home. So i decided to prepare dosa, idli, and vada whatever i have available with.
I quickly make a ginger orange tea and make sooji idli and started to prepare vada...
There are more then 10 different types of vada in our country. The rich mix of different cultures and crops grown in particular regions effects their cooking styles. And needless to say, it becomes a part of that culture too.We have multiple cooking styles from different states but quality of some of these dishes brings us together as one family. 
I had never heard of rice powder till i came to cochin after i got married. I have had a chapati from rice flour here for the first time. But i was told by my elder cousin and massi that On Diwali its customary in some areas of Himachal to make rice pancakes called  as 'ankalu- for smaller size, and anklee- for larger size, with mah ki daal that is black dal with loads of desi ghee and fresh lemon.Yummy.....
That brings me to the point that rice flour is an amazing ingredient that can be used to make different dishes and instantly. One such recipe is instant Rice flour Vada...
Lets get on with the recipe....It is similar to Odappalu only difference is little additional ingredients i.e.Chana dal and grated coconut with sesame seeds. So lets try this today...



INGREDIENTS
Rice Flour - 1 cup
Salt-to taste
Asafoetida Powder - 1/4 tsp
Ginger Grated - 1 tsp
Curry Leaves - a few
Cilantro Chopped - 2 tbsp
Green Chillies - 2 finely chopped
Yogurt – ½ cup
Oil - 2 tsp plus 1 cup for frying the vadai
Water - Enough to form firm dough.


METHOD:
1. Heat the oil in the frying pan on medium high heat. Mix all the dry ingredients together and add curry leaves, cilantro and ginger to it. Mix well and add two tsp of oil to it.

2. Add yogurt and give it a mix. Add water a little at a time and bring the mix together to form a dough.

3. Make quarter cent balls and flatten it and make a hole in the centre. Fry the vada and serve it with chutney or ketchup.


I LOVE THIS RECIPE NOT JUST BECAUSE ITS QUICK,THE DOUGH GIVES ME PERFECTLY SHAPED VADA WHICH I CAN'T MAKE WITH URAD DAL VADAS.....Do try the recipe and let me know in the comments if you have a different variation to it...
